Ingredients

  • 1 roll of puff pastry

  • 200 g fresh asparagus

  • 100 g of Prosciutto Crudo di Parma

  • 150 g mozzarella

  • 2 eggs

  • 50 ml fresh cream

  • Salt and pepper to taste

  • Extra virgin olive oil

PREPARATION

  • Preheat the oven to 180°C.
  • Clean the asparagus, removing the hard part of the stalks. Cut them into pieces about 3-4 cm long.
  • In a pot of boiling salted water, cook the asparagus for about 3-4 minutes, until crispy but tender. Drain and leave to cool.
  • Unroll the puff pastry on a baking tray lined with baking paper. Lightly prick the edges of the pastry with the tines of a fork to form a border.
  • Spread the San Francesco Prosciutto Crudo di Parma evenly over the puff pastry base.
  • Add the cooked asparagus onto the ham base, distributing it evenly.
  • Cut the mozzarella into cubes and arrange them on top of the asparagus.
  • In a bowl, beat the eggs with the fresh cream. Add salt and pepper to taste and mix well.
  • Gently pour the egg and cream mixture over the ingredients in the savoury pie.
  • Brush the edges of the puff pastry with a little extra virgin olive oil.
  • Bake the pie in the preheated oven and bake for about 25-30 minutes, or until the puff pastry is golden and crispy.
  • Remove the savoury pie from the oven and let it cool slightly before serving.
  • Your puff pastry tart with asparagus, ham and mozzarella cheese is ready to enjoy! You can serve it as an appetiser, as a light main dish or as a delicious snack.
