Ingredients
1 roll of puff pastry
200 g fresh asparagus
100 g of Prosciutto Crudo di Parma
150 g mozzarella
2 eggs
50 ml fresh cream
Salt and pepper to taste
Extra virgin olive oil
PREPARATION
- Preheat the oven to 180°C.
- Clean the asparagus, removing the hard part of the stalks. Cut them into pieces about 3-4 cm long.
- In a pot of boiling salted water, cook the asparagus for about 3-4 minutes, until crispy but tender. Drain and leave to cool.
- Unroll the puff pastry on a baking tray lined with baking paper. Lightly prick the edges of the pastry with the tines of a fork to form a border.
- Spread the San Francesco Prosciutto Crudo di Parma evenly over the puff pastry base.
- Add the cooked asparagus onto the ham base, distributing it evenly.
- Cut the mozzarella into cubes and arrange them on top of the asparagus.
- In a bowl, beat the eggs with the fresh cream. Add salt and pepper to taste and mix well.
- Gently pour the egg and cream mixture over the ingredients in the savoury pie.
- Brush the edges of the puff pastry with a little extra virgin olive oil.
- Bake the pie in the preheated oven and bake for about 25-30 minutes, or until the puff pastry is golden and crispy.
- Remove the savoury pie from the oven and let it cool slightly before serving.
- Your puff pastry tart with asparagus, ham and mozzarella cheese is ready to enjoy! You can serve it as an appetiser, as a light main dish or as a delicious snack.
